Potato Pancakes
Ingredients:
2 ½ cups coarsely-shredded raw potato
1 small onion -- grated
1 teaspoon salt
1/3 cup flour - (to 1/2)
1 dash freshly-ground black pepper
1 egg - (to 2)
2 tablespoons salad oil
Applesauce -- for serving
Thirty minutes before serving, mix potatoes, onion, salt, flour, pepper and egg in a medium bowl.
Preheat a skillet over medium-high heat until a drop of water bounces on the surface.
Place 2 tablespoons oil in the skillet.
Make pancake shapes from potato mixture.
Fry, turning once, until both sides are crisp and golden, about 5 minutes on each side.
Drain thoroughly on paper towels.
Place on a warm platter and serve with hot or cold applesauce.
This recipe yields 4 servings.
