Waffles
Ingredients:
2 cups sifted all-purpose flour
3 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
3 egg yolks -- beaten
3 egg whites -- beaten until stiff
1 ¼ cups milk
4 tablespoons butter or margarine -- melted
In a medium bowl, sift flour, baking powder, sugar and salt. In a small bowl, mix beaten egg yolks, milk and shortening.
Add to dry ingredients, stirring lightly until mixed. Bake in a hot waffle iron.
This recipe yields 5 servings.
Sprinkle Over Batter Variations:
• 2 tablespoons chopped nuts
• Fresh or thawed frozen blueberries
• Raisins or chopped dried fruit
• Grated semisweet chocolate
• Thinly-sliced banana
• Finely-chopped ham
• Sliced cooked sausage links
• Crumbled cooked bulk sausage
Add To Batter Variations:
• Apple Waffles: - Add 1 teaspoon cinnamon with dry ingredients. Add 1 cup chopped, peeled apple to batter. Serve with warm applesauce and sour cream.
• Blueberry Waffles: Add 1 cup fresh or frozen blueberries, thawed and drained to dry ingredients.
• Chocolate Waffles: Add 1/2 cup cocoa and an additional 1/4 cup sugar to dry ingredients. Serve with whipped cream and nuts.
• Orange Waffles: Add 1 tablespoon grated orange rind to batter and substitute 1/2 cup orange juice for 1/2 cup milk.
• Spice Waffles: Add 1 teaspoon cinnamon and 1/2 teaspoon nutmeg to dry ingredients. Add 3 tablespoons molasses to liquid ingredients.
