Beef Stew
Ingredients:
2 pounds stew beef
4 turnips -- peeled, and cut into chunks
1 onion -- coarsely chopped
1 can diced tomatoes - (15 oz)
Italian seasoning -- to taste
Salt -- to taste
Freshly-ground black pepper -- to taste
Brown beef in a skillet in a small amount of oil.
You are just searing the outside, don't worry about cooking through.
Place all ingredients in a stew pot, add enough water to just cover. Heat to boiling.
Reduce heat and simmer for at least 30 minutes.
Dissolve cornstarch in a small amount of cold water, and stir into the stew.
Return to boil, and allow to boil until broth is thicker.
This recipe yields 6 servings; 9.5 carb grams per serving.
Comments: You can add some other vegetables such as zucchini, eggplant, green beans, but be sure to adjust the carb counts.
