Salmon Sandwiches With Pesto Mayonnaise
Ingredients:
¼ cup mayonnaise
¼ cup BUITONI Refrigerated Family Size Pesto with Basil
1 (20-in.) baguette
2 tablespoons extra virgin olive oil, divided
1/8 teaspoon SALT
1/8 teaspoon freshly ground black pepper
4 (4-oz.) salmon fillets
4 romaine lettuce leaves
Preheat broiler.
Mix mayonnaise and pesto in a small bowl.
Slice baguette to make 4 equal sections; split in half lengthwise.
Brush salmon with half the oil and season with salt and pepper. Place on a baking sheet 4 to 5 inches from heat and broil for 4 minutes.
Turn fish over and continue cooking, until fish flakes easily with a fork, about 4 more minutes depending on thickness.
Remove from oven and set aside.
Brush each bread half with remaining olive oil and place under broiler until golden brown.
Spread pesto mayonnaise over each half; top half of the bread halves with a salmon fillet and lettuce leaf. Place other side on top to make a sandwich.
Serve immediately.
