Grilled Shrimp Kebabs
Ingredients:
2 pounds large shrimp peeled and deveined
1 green, red or yellow pepper cleaned, seeded, and cut into 1 1/2" squares
2 zucchini squash cut 1 1/2" pieces
2 onions cut into chunks
1 can pineapple chunks
3 tablespoons vegetable or olive oil
3 tablespoons soy sauce
1 tablespoon honey
1/2 teaspoon ginger
Alternate shrimp, onion, pepper, squash and pineapple on skewers. Mix pineapple juice, oil, soy sauce, honey and ginger together and brush onto kebabs. Grill over a moderate heat for approximately 10 minutes. Rotate kebabs once and use any remaining sauce to baste kebabs.
Serve with lemon wedges and wild rice.
This recipe yields 6 to 8 kebabs.
Comments: Cherry tomatoes or other vegetables can be substituted for the onions or peppers if desired.
