Hot Crab Dip
Ingredients:
8 taco shells
16 ounces fresh halibut cut into strips
2 eggs beaten
1/2 cup flour
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cups refried bean heated
2 cups shredded iceberg lettuce
2 tomatoes cored and diced Oil for frying halibut
Mix flour, salt and pepper together and place in plastic bag or paper sack. Dip halibut strips in flour mixture and then beaten egg, and then flour again. Fry in hot oil two to three minutes on each side until lightly brownwd. Drain on paper towel.
In each taco shell, place 2 to 3 tablespoons refried beans, 2 strips fried halibut, shredded lettuce and tomatoes.
Serve two per person, accompanied by your favourite salsa and sour cream.
This recipe yields 4 servings.
