Beef Mulligan Stew With Rice

Beef Mulligan Stew With Rice

Ingredients:

1 pound ground beef

1/2 pound ground ham

1 can tomatoes - (28 oz)

1 teaspoon salt

1/8 teaspoon freshly-ground black pepper

1/2 cup uncooked rice

1 onion -- diced

1 bay leaf

1 can peas - (abt 14 oz)

1 cup diced carrots

Brown meat in a Dutch oven. 

Add tomatoes, salt, pepper, rice, onion, bay leaf, peas and carrots. 

Cover; cook over high heat until mixture comes to a boil. 

Reduce heat and let simmer for 1 hour. 

Remove bay leaf; serve.

This recipe yields 4 to 6 servings.
