Beer Cheese Soup

Beer Cheese Soup

Ingredients:

1 medium onion -- chopped

2 celery stalks -- chopped

1 red bell pepper -- chopped

5 smoked bacon strips

1/4 cup olive oil

2 quarts chicken stock

1 pint beer -- see * Note

2 cups heavy cream

1 teaspoon fresh thyme

2 tablespoons hot pepper sauce

1 tablespoon Worcestershire sauce

Salt -- to taste
Freshly-ground black pepper -- to taste

8 ounces sharp yellow cheese

2 ounces blue cheese

* Note:  Dark Bavarian bock or double bock works best in recipe.

Saute onions, celery, red bell pepper and bacon in olive oil. 

Drain off the oils and add stock, beer and cream. 

Bring just to a boil. 

Add thyme, hot pepper sauce, Worcestershire sauce, yellow cheese, blue cheese and salt and pepper to taste. 

If necessary, thicken with a mixture of 1 tablespoon firm butter combined with 1 tablespoon flour.

This recipe yields 6 servings.
